Avui que \u00e9s Sant Joan, a casa l&#8217;Enriqueta estan de festa. I nosaltres tamb\u00e9! El Jes\u00fas ha preparat un parell de coques que tenen una bona pinta&#8230; :P<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>Per coure els menuts:\n<ul>\n<li>Menuts d&#8217;\u00e0nec\n<ul>\n<li>Ales (v\u00e9nen sense la punteta)<\/li>\n<li>Colls<\/li>\n<li>Pedrers<\/li>\n<\/ul>\n<\/li>\n<li>un\u00a0tros de ceba<\/li>\n<li>1 os de pernil<\/li>\n<\/ul>\n<\/li>\n<li>Per fer el sofregit:\n<ul>\n<li>2 cebes<\/li>\n<li>2 tom\u00e0quets<\/li>\n<li>1 branqueta de canyella<\/li>\n<li>3 boletes de pebre negre<\/li>\n<li>1 i 1\/2 culleradetes de postre de sucre<\/li>\n<li>1 pastilla d&#8217;avecrem<\/li>\n<li>3 culleradetes de caf\u00e8 de piment\u00f3n<\/li>\n<li>1 gotet de vi<\/li>\n<li>1 llauna de rovellons<\/li>\n<\/ul>\n<\/li>\n<li>Per fer la picada:\n<ul>\n<li>un grapat d&#8217;ametlles torrades pelades<\/li>\n<li>1 o 2 dents d&#8217;all<\/li>\n<li>1 galeta maria<\/li>\n<li>1 o 2 cullerades soperes de farina<\/li>\n<li>1 tassa de brou<\/li>\n<li>safr\u00e0<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>Elaboraci\u00f3:<\/p>\n<p>El dia abans:<\/p>\n<ol>\n<li>Es couen els menuts amb aigua, sal, un tros de ceba i un os de pernil. El brou el guardem per fer el sofregit i per fer alguna sopa un altre dia.<\/li>\n<\/ol>\n<p>El mateix dia:<\/p>\n<ol>\n<li>Es tallen les ales per l&#8217;articulaci\u00f3 amb unes tisores de cuina, i els colls per la meitat amb una tisora de podar.<\/li>\n<li>Es fa el sofregit\n<ol>\n<li>En una cassola de fang, s&#8217;hi posa oli<\/li>\n<li>S&#8217;hi afegeixen les\u00a0cebes tallades a gajos i 3 dents d&#8217;alls pelades i partides per la meitat<\/li>\n<li>(15&#8242; aprox.)<\/li>\n<li>S&#8217;hi afegeixen els\u00a0tom\u00e0quets picats (a trossos grossos si hem de fer servir el passapur\u00e9).<\/li>\n<li>S&#8217;hi va afegint:\n<ol>\n<li>Sal<\/li>\n<li>Canyella<\/li>\n<li>Pebre negre<\/li>\n<li>Sucre<\/li>\n<li>Avecrem<\/li>\n<li>Piment\u00f3n<\/li>\n<li>Vi<\/li>\n<\/ol>\n<\/li>\n<li>(10&#8242; aprox)<\/li>\n<li>Es passa el sofergit pel passapur\u00e9 (opcional). A mida que es fa anar la manivela, s&#8217;hi aboquen unes tasses de brou de la cocci\u00f3. En total, unes 4 tasses.<\/li>\n<li>(5&#8242; aprox.)<\/li>\n<li>S&#8217;aboquen els menuts a la cassola i es remena. Al cap d&#8217;una estona, s&#8217;hi afegeixen els rovellons.<\/li>\n<li>(20&#8242; aprox.)<\/li>\n<li>Es prepara la picada.
