Far\u00e9 un poolish, ja que aquest cap de setmana serem a casa i aix\u00ed podem estar-ne m\u00e9s pendents. El deixar\u00e9 treballant aquesta nit i dem\u00e0 al mat\u00ed far\u00e9 la massa, el format i el fornejat.<\/p>\n<p>Seguir\u00e9 (ejem) la recepta del pa de xapata del Sr. Yarza.<\/p>\n<p>Com ho hem fet?<\/p>\n<ul>\n<li>Al vespre, hem preparat un poolish:\n<ul>\n<li>450 g de farina de blat integral<\/li>\n<li>450 g d&#8217;aigua<\/li>\n<li>1 culleradeta de caf\u00e8 molt rasa de llevat sec (0,9 g)<\/li>\n<\/ul>\n<\/li>\n<li>L&#8217;endem\u00e0 al mat\u00ed&#8230; Hem seguit la recepta del llibre (s\u00ed!), amb les quantitats:\n<ul>\n<li>300 g de farina<\/li>\n<li>120 g d&#8217;aigua<\/li>\n<li>5 g de sal<\/li>\n<\/ul>\n<\/li>\n<\/ul>\n<p>Resultat<\/p>\n<ul>\n<li>3 xapates bon\u00edssimes.<\/li>\n<\/ul>\n<p>Qu\u00e8 hem apr\u00e8s<\/p>\n<ul>\n<li>El blat es deixa treballar molt millor que altres cereals, i malgrat ser integral la proporci\u00f3 d&#8217;aigua de la recepta ens ha anat b\u00e9.<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Avui que \u00e9s el meu sant, vull provar de fer un pa amb farina de blat integral.
