Avui comencem amb un pa de Sant Anastasi, fet amb 100% farina integral d&#8217;espelta.<\/p>\n<p>Ingredients:<\/p>\n<ul>\n<li>500 g de farina integral d&#8217;espelta de Ca l&#8217;Amadeu<\/li>\n<li>1 cc de llevat sec Bruggerman<\/li>\n<li>5 g de sal<\/li>\n<li>385 g d&#8217;aigua<\/li>\n<\/ul>\n<p>Com ho hem fet:<\/p>\n<ol>\n<li>Massa:\n<ol>\n<li>Hem mesclat la farina, el llevat i la sal amb les mans<\/li>\n<li>Hi hem afegit l&#8217;aigua i ho hem remenat\u00a0amb la rasqueta<\/li>\n<li>Hem treballat\u00a0la massa sobre el marbre, sense afegir-hi farina, fent plecs i cops a l&#8217;estil de Bertinet<\/li>\n<li>Hem enfarinat\u00a0sota la massa i el bol. Hem fet \u00a0uns plecs cap al centre formant una bola, l&#8217;hem girada i l&#8217;hem passada al bol.<\/li>\n<li>Ho hem deixat\u00a0reposar 3 hores tapat amb un drap. La massa ha doblat el seu volum.<\/li>\n<\/ol>\n<\/li>\n<li>Forma:\n<ol>\n<li>Hem enfarinat\u00a0la taula i hi hem abocat\u00a0la massa desenganxant-la amb la rasqueta<\/li>\n<li>L&#8217;hem plegada com un tr\u00edptic i hem fet\u00a0plecs cap al centre, formant una bola. L&#8217;hem girada.<\/li>\n<li>L&#8217;hem posada a sobre d&#8217;una safata, en un paper de forn, hi hem fet 3 talls amb un ganivet i l&#8217;hem tapada amb un drap<\/li>\n<li>L&#8217;hem deixada reposar 1.30 h<\/li>\n<\/ol>\n<\/li>\n<li>Cocci\u00f3:\n<ol>\n<li>Hem preescalfat\u00a0el forn a 250\u00ba amb l&#8217;opci\u00f3 sota. Hem posat\u00a0a la base una safata buida i al mig la reixa.<\/li>\n<li>Hem escalfat\u00a0la tetera<\/li>\n<li>Quan ens hem cansat d&#8217;esperar, hem obert el forn, hem posat aigua a la safata (una tassa aprox.) i hem posat el pa a la reixa.<\/li>\n<li>Als 20 minuts de cocci\u00f3, hem obert 3 segons el forn perqu\u00e8 marx\u00e9s el vapor. Ho hem tornat a fer als 30 minuts&#8230;<\/li>\n<li>Als 36 minuts de cocci\u00f3, hem posat l&#8217;opci\u00f3 dalt+sota, ja que la llum semblava que no s&#8217;apagu\u00e9s mai<\/li>\n<li>Als 43 minuts de cocci\u00f3, hem tret la safata de sota, ja que semblava que la calor no li arrib\u00e9s al pa<\/li>\n<li>Als 54 minuts de cocci\u00f3, hem\u00a0tret el pa del forn i l&#8217;hem deixat a la reixa i tapat amb un drap.<\/li>\n<\/ol>\n<\/li>\n<\/ol>\n<p>Resultat:<\/p>\n<ul>\n<li>Bon\u00edssim<\/li>\n<li>Crosta for\u00e7a cruixent, menys a sota, que ha quedat m\u00e9s tova<\/li>\n<li>4,7 cm d&#8217;al\u00e7ada<\/li>\n<\/ul>\n<p>Qu\u00e8 hem apr\u00e8s:<\/p>\n<ul>\n<li>\u00c9s millor pesar els ingredients\u00a0al principi de tot<\/li>\n<li>Va b\u00e9 tenir a m\u00e0 una mica de farina per enfarinar les superf\u00edcies<\/li>\n<li>El sistema de la safata amb aigua \u00e9s inc\u00f2mode a l&#8217;hora d&#8217;omplir-la amb la tetera.<\/li>\n<li>Cal aprendre a mesurar la quantitat
