Com sempre, he acabat cuinant-ho a la seva cuina, i \u00e9s que l&#8217;Enriqueta t\u00e9 ra\u00f3, que la millor manera d&#8217;aprendre \u00e9s veient-ho i fent-ho.<\/p>\n<p>El resultat ha estat realment espectacular!<\/p>\n<p>M&#8217;he proposat cuinar cada setmana una recepta de l&#8217;Enriqueta. Aquesta \u00e9s la primera de la s\u00e8rie. Comencem forts!<\/p>\n<p>Ingredients (3 racions):<\/p>\n<ul>\n<li>1\/3 de conill tallat a trossets<\/li>\n<li>2 trossos\u00a0de costella de porc<\/li>\n<li>1 llesca gruixudeta de pernil<\/li>\n<li>1 ceba petita<\/li>\n<li>4 dents d&#8217;all<\/li>\n<li>1 trosset de pebrot verd dels allargats<\/li>\n<li>2 carxofes petites<\/li>\n<li>3 tom\u00e0quets<\/li>\n<li>1 gotet de vi<\/li>\n<li>arr\u00f2s SOS (20 minuts)<\/li>\n<li>oli, sal,\u00a0canyella en branca, sucre, pebre vermell, safr\u00e0, julivert<\/li>\n<\/ul>\n<p>Elaboraci\u00f3:<\/p>\n<ol>\n<li>Rentem el conill i el porc<\/li>\n<li>En una cassola de fang, hi posem:\n<ol>\n<li>oli (1 gotet)<\/li>\n<li>el conill<\/li>\n<li>la costella de porc<\/li>\n<li>sal<\/li>\n<li>un parell de\u00a0trossets de canyella<\/li>\n<\/ol>\n<\/li>\n<li>Engeguem el foc. Cal coure-ho sense tapar i anar-ho remenant sovint.<\/li>\n<li>(&#8230;)<\/li>\n<li>Quan el conill ja est\u00e0 segellat, hi afegim 2 gots d&#8217;aigua.<\/li>\n<li>(&#8230;)<\/li>\n<li>Hi afegim uns trossets de pebrot verd<\/li>\n<li>(&#8230;)<\/li>\n<li>Hi afegim el pernil tallat a trossets<\/li>\n<li>Hi afegim la ceba i 2 dents d&#8217;all picats<\/li>\n<li>Hi afegim les carxofes tallades per la meitat<\/li>\n<li>(&#8230;)<\/li>\n<li>Hi afegim el tom\u00e0quet picat, a temps perqu\u00e8 no se&#8217;ns cremi la ceba<\/li>\n<li>(&#8230;)<\/li>\n<li>Hi afegim un gotet de vi (blanc, negre o rosat)<\/li>\n<li>Rectifiquem de sal i hi posem 1 culleradeta de caf\u00e8 de sucre<\/li>\n<li>(&#8230;) Fins aqu\u00ed, han passat unes dues horetes&#8230;<\/li>\n<li>Escalfem aigua a part<\/li>\n<li>Afegim l&#8217;arr\u00f2s a la cassola (2 punys oberts per persona), remenem, hi afegim una culleradeta de postre de pebre vermell i seguim remenant<\/li>\n<li>(&#8230;)<\/li>\n<li>Hi afegim l&#8217;aigua, mirem el rellotge i anem remenant de tant en tant<\/li>\n<li>Rectifiquem de sal<\/li>\n<li>Hi posem una mica de safr\u00e0<\/li>\n<li>Fem una picada a morter amb 2 dents d&#8217;all i unes branques de julivert<\/li>\n<li>Als 15 minuts de cocci\u00f3 ja podem afegir la picada i decidir si apaguem el foc o ho deixem uns pocs minuts m\u00e9s.
